A comida indiana faz parte da cultura dos londrinos, tal como o peixe e as batatas fritas, os sacos de viagem e um café branco muito caro. E um dos nomes mais importantes em Londres, quando se trata de cozinha indiana, é o Chef Vivek Singh. Como a força culinária por trás de restaurantes como Cinnamon Kitchen e The Cinnamon Club, Vivek Singh conseguiu desafiar e mudar as percepções e noções preconcebidas sobre a comida indiana em todo o Reino Unido. Fê-lo através dos seus cinco restaurantes Cinnamon Collection (quatro em Londres e um em Oxford), seis livros de receitas e inúmeras aparições nos meios de comunicação social.
Mas Vivek Singh não está aqui apenas para trazer boa comida aos londrinos. Ele também está aqui para partilhar aspectos mais amplos da cultura e celebração indianas. Depois de termos conversado com nomes como Natty Can Cook, Tarell McIntosh e The Flygerians, tivemos a oportunidade de conversar com Vivek Singh sobre a cozinha.
O que o inspirou a tornar-se cozinheiro e quais são as suas maiores influências culinárias que moldaram o seu estilo de cozinha?
A maior parte das minhas memórias de infância tem a ver com comida ou com muitas pessoas à volta da comida – quer se trate de pequenas refeições familiares cozinhadas a partir do zero, de refeições embaladas para a escola ou de grandes banquetes comunitários, a comida esteve sempre no centro de tudo. O gosto pela comida veio certamente da cozinha caseira da minha mãe.
Também li livros de Marco Pierre White e Raymond Blanc, que influenciaram muito a minha maneira de pensar como cozinheiro. Outras pessoas que me influenciaram muito durante a minha carreira como chefe foram Vikram Oberoi, quando trabalhava com o grupo de hotéis Oberoi, e Paul Jones, que era o diretor de F&B do hotel The Oberoi Rajvilas. Em Londres, a minha experiência foi muito marcada por Iqbal Wahhab e Eric Chavot, que tinham acabado de receber duas estrelas Michelin em 2001!
Quais são os maiores desafios e recompensas de ser um jovem chef em Londres?
Na minha opinião, Londres é a melhor cidade para se cozinhar e aprender o seu ofício – simplesmente porque há tanta diversidade, profundidade e amplitude de diferentes estilos de cozinha à sua porta, por isso é realmente uma grande oportunidade para aprender, provar e prosperar.
Suponho que o maior desafio seja o custo de vida em Londres, mas muitas coisas estão a aumentar em termos de condições de trabalho e de melhores salários para ajudar a apoiar os jovens cozinheiros. Um conselho para os jovens cozinheiros é tentar poupar pelo menos 20 libras por mês para comprar um novo livro de culinária, que os ajudará a guiar, aprender e praticar as suas capacidades, enquanto experimentam novos pratos inovadores.
Como é que programas como “The Bear” e outras representações mediáticas influenciaram a perceção pública dos chefes de cozinha?
Penso que “The Bear” faz um excelente trabalho ao mostrar a energia e o ritmo acelerado do trabalho numa cozinha movimentada e como cada serviço é completamente diferente. Por muitos obstáculos que se ultrapassem, há sempre novos obstáculos a ultrapassar quando se gere uma cozinha. No entanto, na maior parte das vezes, tudo acaba por se resolver por si só.
Gostei muito do programa, mas também sei que há pessoas, como a minha mulher, que acham que ver o programa é demasiado stressante, quanto mais trabalhar na cozinha! Nesse sentido, suponho que não é um grande apoio para a nossa indústria em termos de atração de novos talentos. No entanto, pessoalmente, na minha experiência, esse nível de intensidade não é algo que eu tenha tido de sustentar ao longo dos anos – e considero que consegui um bom equilíbrio de trabalho.
Como é que a cena culinária londrina mudou ao longo dos últimos anos?
É incrível o quanto a cena culinária londrina mudou nos últimos anos, e mais ainda desde a chegada das redes sociais, como o Instagram e o TikTok, que têm uma enorme influência nas opções gastronómicas das pessoas. Tornou-se mais visual, com uma maior variedade de escolha.
O panorama da restauração continua a mudar e os restaurantes precisam de se adaptar constantemente, enquanto os restaurantes estabelecidos há muito tempo continuam a prosperar e sabem como proporcionar uma experiência gastronómica confortável e de elevada qualidade. Afinal de contas, gostamos de clássicos por uma razão e quando descobrimos um, é algo de belo.
Como vê o panorama culinário de Londres nos próximos 5 a 10 anos?
Penso que a cena gastronómica londrina continuará a evoluir em duas direcções distintas – na primeira, haverá cada vez mais chefes a apostar em jantares requintados e experiências exclusivas, com um enfoque contínuo na sustentabilidade, enquanto na segunda, os restaurantes se concentrarão fortemente numa abordagem mais descontraída, servindo pratos clássicos familiares e nostálgicos, que, na minha opinião, estão a aumentar. A cena dos restaurantes não se expandirá apenas numa direção, mas em ambas as áreas.
Pode partilhar uma experiência memorável ou uma anedota do seu tempo de trabalho nas cozinhas de Londres?
Lembro-me que, nos meus primeiros tempos em Londres, passava algum tempo com Eric Chavot nas suas cozinhas e criámos uma certa amizade. Quando abrimos o Cinnamon Club em 2001, por vezes recebíamos clientes que não queriam tempero nos seus pratos (imagine-se, num restaurante indiano!), por isso o Eric ofereceu-se para nos ensinar o seu risoto e bife com molho de vinho tinto como opções para “os que têm problemas com o tempero”. Ele visitou-nos novamente em 2015 e, depois de provar os pratos, disse que éramos possivelmente a única equipa que fazia estes pratos tão bem como ele os tinha ensinado há 15 anos! Foi um momento de orgulho maravilhoso para mim e para a minha equipa.
