
London is obsessed with sandwiches. That much is wholly clear to anyone with even a passing interest in our city. All you have to do is look at how quickly the sandwich selection at Tesco runs out. But even beyond the beloved Meal Deal, our city is home to full-on sandwich festivals, cult sub slingers, fire-cooked sarnies, and secret sandwich spots. Heck, we at Secret London even have our own special sandwich on the menu at one of our favourite spots. And now, Toklas Bakery is getting in on the action with a special sandwich market.
This weekend, on July 12, a pop-up sandwich market will give London sandwich fans (fan-wiches?) the chance to try some truly special sandwich creations. Toklas is bringing together heavyweights from the London restaurant scene to put their stamps on focaccia, brioche, and sourdough delights.
At the centre of the offering is Toklas’ own offering, a new Toklas Brioche Bun with Salame Rosa and Cheese Fonduta from the Head Chef at Toklas Bakery, Kyran McAdam. Inspired by a recent collaboration with Jeremy Chan of the two-Michelin-starred Ikoyi, McAdam has been “finessing his [sandwich] game and perfecting his art over the last six months.”

At the sandwich market
The sandwich market will kick off at 11am on Saturday, July 12, at Toklas Bakery. It will run from 11am until 3pm – or until they sell out. And given the cooking pedigree behind the event, we highly recommend turning up early so you don’t miss out.
But you’re probably wondering what kind of sandwiches will be on offer. While we don’t want to spoil the whole list (after all, what’s life without a few surprises?), these are some of the ones we’re most excited to try:
- Olive Oil ice cream sandwich with Rosemary biscuits (Toklas’ new head baker Ellie Chisholm)
- Fried ciccioli with fennel kraut, apple mustard and fennel mayo, served in fresh Manteca focaccia (Manteca)
- Pastrami, Pantelleria capers, shifka and mustard aioli sarnies with pickled cucumber in Za’atar focaccia (The Palomar)
- Portland crab, confit fennel and lardo roll (Crispin)
Oh, and naturally, there will be plenty of drinks too. Guests can sip on negronis, Toklas wines, and beers as they munch on the sarnie delicacies.
