Lockdown has turned us all into chefs and bakers—or at least that’s what our Instagram feeds imply. But how do you fancy upping your game?
As part of our ongoing ‘Lockdown Live’ series, curated in partnership with Martell, we’re spotlighting some of the UK’s most exciting local artists and chefs. For this week’s grand finale, acclaimed chef Elizabeth Haigh of Singaporean food stall Mei Mei will be wowing audiences with a delicious dessert.
Elizabeth Haigh—known as @the_modernchef on Instagram—draws inspiration from her British and Singaporean heritage. She competed on MasterChef in 2011, and went on to win a Michelin star at acclaimed Hackney restaurant Pidgin barely a year after opening. She’s also a co-founder of Kaizon House, a series of residencies, collaborative events and restaurants, and the big sister of Borough Market Kitchen’s Mei Mei, a Singaporean food stall specialising in Hainanese chicken rice and Singaporean Nanyang Kopi.
Hijacking Secret London’s Instagram live feed at 6pm on Thursday, June 18, Elizabeth Haigh will be showing off her skills and teaching viewers how to make a dreamy grilled pineapple dish with Martell cognac and caramel butter.
If you’d like to cook-along with Elizabeth, here’s a list of all the things you’ll need:
- 1 small pineapple
- 100g brown sugar
- 40ml XO cognac
- 1 tbsp salted butter
- Optional : 1 kaffir lime / lime zest
- Ice cream to serve
