The founder of the UK’s most-loved Mexican chain, a TikTok cooking legend, and London’s queen of desserts walk into a bar restaurant. No, it’s not the convoluted start to a food-based joke, it’s the premise behind an upcoming supper club presented by Wahaca founder, Tommi Miers. Joining Miers in hosting the event, Viñeta de Oaxaca, are Sam Way and Ravneet Gill to cook up a five-course menu of food inspired by the trio’s recent trip to Oaxaca.
Miers’ love of Oaxaca, considered by many to be the street food capital of Mexico, should come as no surprise. It was after all the inspiration behind the Wahaca restaurant group – whose name acts as a handy pronunciation guide for the city name. And over two years of travel restrictions, it was also the place that Miers was most keen to return to. Naturally, she had to take a few friends with her. So in January 2022 she took Way and Gill, and they immersed themselves in the city’s bold food culture. Over the course of a week they visited lively food markets and rural mezcal distilleries, tasting everything as they went. Upon their return to the UK they were determined to share their inspirations and memories.
So, naturally, they’ll be cooking it. For one night, at Wahaca Shoreditch, they’ll be presenting Viñeta de Oaxaca: “a taste of Oaxaca, curated by Wahaca”. The food will range from tostadas with mole coloradito to courgette flower tamales and lamb barbacoa, among plenty more. And a salted caramel tart will cap off the meal. Taking their inspiration and experiences, and coupling that with authentic recipes and techniques, it’s sure to be a delicious affair.
