Tom Griffiths and James Cochran will take to the Lockdown Live stage to teach you how to make some epic lockdown dinners.
Hot on the heels of our live session with Chef Tom Brown of Hackney’s Cornerstone, we’re shining a light on more of London’s top chefs as part of our ‘Lockdown Live’ series, in partnership with Martell.
First up is Tom Griffiths, of Flank fame, taking over our Instagram page on May 5. Flank started off in a Brighton boozer in 2015, serving nose-to-tail comfort food out of the pub kitchen. It made its way to London in 2017, where it has since collaborated with the likes of Ace Hotel and Kricket. Tom and the Flank crew now have two street food sites, Old Spitalfields Market and Victoria Market Halls, and are looking for somewhere permanent to pitch up after lockdown.
Tom’s style is all about fun and simple meals, and he’ll be taking you through two of his favourite dishes… with a Martell twist. He’ll start off with Martell-glazed ham, egg and chips, followed by a Martell English trifle. To get involved on Tuesday, May 5, at 6pm you’ll need to do two things: 1) head over to Fever to sign up for alerts, and 2) head to the shop for the following ingredients.
Martell-glazed ham, egg and chips
- Potatoes
- Bag of frozen peas
- Sea salt
- Smoked ham hock
- Marmalade
- 1 Blackstrap Molasses
- Cloves
- Dijon mustard
- 1 Bay leaf
- Onion
- Butter
- Mint
- Chives
- 6 eggs
- Baby brown onions
- Baby gem lettuce
Martell English trifle
- Fresh strawberries & raspberries
- Strawberry jelly
- Left over cake or sponge fingers
- 250g butter
- 2ltr double cream
- Caster sugar
- Vanilla beans
- 6 eggs
- Hundreds and thousands
- Flaked almonds
Next up is Whitstable-born James Cochran with some seriously mouthwatering Martell-glazed BBQ chicken wings. James Cochran is the man and legend behind 12:51 in Islington, and a face you may also know from BBC2’s Great British Menu back in 2018. Throughout his career, he’s worked in many prestigious, Michelin-starred restaurants, and has earned himself serious critical acclaim.
James will be stealing the spotlight on Tuesday May 12 at 6pm, and in order to take part in his cook-along, you’ll need the following ingredients:
Wings
- 2kg of chicken wings
- 1kg of buttermilk
- Salt
- 500g plain flour
- 250g corn starch
Martell BBQ glaze
- 2 cloves of garlic (grated)
- Thumb size piece of ginger (grated)
- 120ml of brandy
- 60g dark brown sugar
- 1x scotch bonnet
Garnish
- 1x onion
- 1x red chilli
- 1x lime
- 1x bunch of tarragon
- 75ml brandy
