If you were one of the lucky Londoners who got their hands on an incredible Baileys iced coffee creation at the Baileys Little Treat Café in Shoreditch earlier this month, then we hope you enjoyed them as much as we did! But if you didn’t manage to nab one – don’t be disheartened, because we’ve put together a list of our favourite coffee-infused Baileys recipes to enjoy at home this summer. From luxurious iced coffees to deliciously caffeinated cocktails – these Baileys recipes are the ultimate indulgent summer sips.
Baileys iced coffees
1. Baileys Pistachio Chocolate Iced Coffee

If you’re a fully fledged member of the Dubai Chocolate fan club, then you’re going to want to make this as a matter of priority. Start by crushing 5g of pistachios by hand or in a food processor, before combining 30ml Baileys Irish Cream, 30ml espresso, 90g milk, and 90g of pistachio ice cream in a blender. Then pour 20ml white chocolate sauce into your glass, followed by the frappe mix from the blender. Then sprinkle with your crushed pistachios and a generous grating of white chocolate, and enjoy!
2. Baileys Tiramisu Iced Coffee

Imagine your favourite coffee-based dessert transformed into a sumptuous drink, and there you have the Baileys Tiramisu Iced Coffee. First, you need to blend 30ml Baileys Irish Cream, 30ml espresso, 80g whole milk, and 80g ice until smooth. Then pour 2 tablespoons of the mixture into your glass before adding a layer of squirty cream and a generous dusting of cocoa. Repeat this process until the glass is full, then top with more cream and cocoa, and enjoy with a savoiardi biscuit garnish.
3. Baileys Millionaire Shortbread Iced Coffee

For the ultimate indulgent iced coffee, you need to try this Baileys Millionaire Shortbread creation. Step one is combining 30ml Baileys Irish Cream, 30ml espresso, 90g whole milk, and 90g ice in a blender until smooth. Then coat the base of your glass in chocolate sauce, before pouring in the frappe mix. Finish by decorating with 10g crushed shortbread, and drizzling 10g Baileys caramel sauce on top.
Baileys coffee-inspired cocktails
1. Baileys White Russian

This rich, velvety smooth cocktail is both extremely low effort and high reward. All you need to do is pour 25ml espresso into your glass, then add ice and 25ml vodka. Then, gently pour in 25ml Baileys Irish Cream and watch a beautiful marble effect take shape! Your cocktail is now ready to enjoy, but if you want to add some finishing touches with a garnish, cacao nibs or a fresh raspberry/cherry are both great options.
2. Baileys Espresso Martini

It’s the OG caffeinated cocktail – with a brilliant Baileys twist. Swapping out coffee liqueur for Baileys gives this signature serve a truly luxurious taste, and it’s easy as ever to make. Simply add 50ml Baileys Irish Cream, 25ml espresso, and 25ml vodka to a cocktail shaker with ice and give it a vigorous shake. Then, strain it into a martini glass and garnish with three coffee beans.
3. Baileys Flat White Martini Cocktail

Perhaps the richer, creamier cousin of the Baileys Espresso Martini, the Baileys Flat White Martini, is a little lighter on the coffee, but equally delicious in taste. To start, add 50ml Baileys Irish Cream, 25ml vodka, and 1-2 shots of cold espresso to a cocktail shaker filled with ice, and shake it well. Strain into your martini glass and garnish with three coffee beans, before enjoying the fruits of your labour!
